I’ve been on the hunt for some delicious vegetarian, high-protein and quick recipes to incorporate in my meal planning. Here’s a favorite I have modified and wanted to share:

Vegetarian Chili

  • 2 Tbsp. olive oil
  • 1 white or yellow onion (diced)
  • 1 cup celery (diced – I added top greens as well)
  • 3 carrots (diced)
  • 2-3 tsp. minced garlic
  • 1 red or green bell pepper (diced)
  • 2 16 oz cans diced tomatoes (or use fresh diced)
  • 2 tsp. cumin powder
  • 2-3 Tbsp. chili powder (less if you aren’t up for spicy)
  • Himalayan salt and ground pepper for taste
  • 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1 green chili (diced)
  • 1 15 oz cans of organic (sugar/corn-syrup free) tomato sauce
  • 1 16 oz kidney beans
  • 1 16 oz can pinto beans
  • 1 16 oz can white beans or white cannelloni beans

Throw all ingredients in a crockpot on low and let sit all day (great for meal prep on a busy day) – or you can cook in a pot on the stove top for 30-60 mins.

Top with fresh green onions, cilantro, tomatoes, cheese and sour cream if desired!
